Cookie Recipe
This recipe is my version of Tosca Reno’s Whole-Wheat Flax Cookies from her Eat Clean Diet Cookbook. They are super delicious!
Kaitlin’s Whole-Wheat Flax Cookies
1/2 cup flax seeds
1 1/2 cups buttermilk (or skim milk soured with 1 Tbsp lemon juice)
1 cups whole wheat flour
1 cup white flour
1/2 cup ground flax seeds (flax meal)
1 cup rolled oats
1 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamon
1 cup canola oil
1 cup brown sugar
2 eggs
2 Tbsp vanilla extract
2 Tbsp coarsely chopped nuts: pecans/almonds/walnuts
1/2 cup chocolate chips
Preheat oven to 375 F.
In large bowl, measure all dry ingredients including flour, flax seeds, flax meal, oats, baking powder, baking soda, sea salt, and cinnamon. Combine with whisk until blended. Don’t add nuts or chocolate chips yet!
In another medium sized bowl beat oil and sugar until fluffy. Add one egg at a time and beat well. Add vanilla and mix well again. Add buttermilk.
Combine liquid and dry ingredients and fold until all ingredients are evenly blended. Add chocolate chips and nuts and mix lightly until blended. The batter will feel extremely wet. I let it sit for approximately half an hour so that the oatmeal and flax could soak up some of the buttermilk.
Once the batter has thickened, prepare a cookie sheet with parchment paper or spray lightly with cooking spray. Using a large soup spoon (or ice cream scoop), take dough and make balls. Place on cookie sheet and bake for 15 minutes.

Love lazy afternoons...
Today is another lazy Sunday afternoon. They usually involve naps, reading/TV, random meals, and LOTS of tea. Today in particular has included church, chatting with friends afterward, lunch, quick trip to Elmira for groceries (where a cute old man admired our car and asked about the fuel efficiency....he was so adorable) and enjoying the latest Style Watch magazine. Tonight, some friends are coming over to watch a movie. I like relaxing :)

"#26 - Give Blood"
Since watching The Buried Life, I've become inspired to make a "bucket list" of my own. So, one weekend I was hanging out with my friends, Stuart and Ben, and they wanted me to give blood right then and there, and to be honest it freaked me out. I need time to prepare myself!! Well, it didn't happen that night because the clinic is closed Saturday nights, but me and Ben went later the next week and brought Kaylee and Julia along.
They ask you lots of questions and take your blood pressure and heart rate, (mine took a little while to settle down 'cause I was a tad nervous) but other than that, it's a pretty smooth and easy process. You call in first to make an appointment, 1-888-2-DONATE, and then just show up!
The needle didn't really hurt, and to be honest I didn't feel nauseous at any point. You give half a liter of blood at a time.
You'll notice that we happened to be watching a news story about a shark attack survivor while all this was going on...

Never Say Never!
I'll admit that I was never really a fan of Justin Bieber 'til I saw his movie. So cute and super inspirational. Here's some shots of our trip to the movies...Julia posing like JB and me and Kaylee giving him a lil smooch. The bottom right photo is from a teeny-bopper magazine.

I Love Tea!
Here's a couple iPhone shots I snapped a couple weeks ago at my Grandma's house. Love going over for lunch, sometimes a nap, and always the post-meal sunflower seeds and tea. She usually prepares Rooibos, which is one of my favourites. Notice that she uses 5 tea bags for one pot of tea! Aaaaand has the most random mugs! As you can see, mine was the "Father" horse mug. I believe Julia's also said something strange.
